TITLE – SOUS CHEF
STATUS – Full-Time
REPORTS TO: Executive Chef
DESCRIPTION:
- Learn and remain familiar with menu items and assume responsibility for all food rotation and proper timing of foods
- Work closely with the Executive Chef to ensure all items needed are in stock for the current menus
- Familiar with a variety of culinary food concepts and procedures
- Offers suggestions and creative ideas that can improve upon the kitchen’s performance
- Assists with menu planning, inventory, and management of supplies.
- Orders food supplies
- Coordinate with the Executive Chef for food preparation, presentation and proper service procedures
- Plan and supervise the daily operations of the kitchen
- Maintain cleanliness of work station and all kitchen areas
- Be conscience of proper storage of all food products
- Oversee inventory of the stations
- Check all food for proper consistency, flavor and temperature
- Coordinate workflow to ensure a smooth running operation
- Check food orders going out of the kitchen and food being prepared
- Monitor employee’s performance
- Communicate with Executive Chef on all problems, complaints and discrepancies
- Inspects food storage and directs sanitary maintenance of kitchen and storage facilities
- Researches new development in method and equipment for application to food service operations and makes recommendations
- Attend and schedule team meetings as required
- Trains new employees
- Solves problems that arise and seizes control of issues in the kitchen
QUALIFICATIONS:
- Formal Training or certification in culinary studies
- 3 – 4 years of experience
- Working knowledge of health and sanitation regulations
- Knowledge of various cooking methods, ingredients, and procedures
- Ability to follow instructions, written and verbal
- Ability to deal well with change
- Familiarity with industry’s best practices
- Management, Leadership, Time Management & Creativity skills
- Works well under pressure

TITLE – FIRST COOK
STATUS – Seasonal
REPORTS TO: Executive Chef
DESCRIPTION:
- Prepare food and maintain cleanliness and order in the kitchen
- Prepares, seasons, and cooks, (by appropriate method as specified and laid out by management) food products, ensuring proper cooking techniques are used and adhered too
- Performs his or her duties with the framework of business standards and procedures defined by the corporate management as well as within the framework of directives and regulations defined by the kitchen management
- Ability to learn, take initiative, lead, teach and develop, plan and organize, adapt, persevere, guest focus, judge, be punctual, appear professional, plan in advance
- Follow and complete tasks given out by senior cook
- Gather, wash, cut, cook, store, season, taste and present all food ingredients
- Cook, prepare, present all meats and fish
- Cook, prepare, and finish all sauces
- Complete presentation of all plates and platters
- Keep a clean, safe, and organized work area at all times
- Maintain a positive and professional approach to everything that is done
- Anticipate misconceptions or confusions and correct them before they become problems
- Use kitchen equipment, in proper manner, taking care not to abuse or misuse
- Organize daily tasks
- Plan and load trucks for transport
- Report all kitchen equipment malfunctions
- Work with 2nd cook to train and effectively complete tasks
- This position is classified as safety sensitive, defined in accordance with our fit for duty program
QUALIFICATIONS:
- High school diploma, or equivalent
- Smart serve certified
- Good understanding of food and beverage industry
- Computer skills - Jonas experience preferred
- Bartending certificate
